Virgin Coconut Oil (VCO) merupakan minyak berkualitas tinggi yang diekstraksi dari daging buah kelapa. Penelitian bertujuan mengetahui rendemen VCO yang diolah dengan cara sentrifugasi menggunakan buah dari kelapa Genjah Salak dan kelapa Dalam Mapanget serta karakteristik VCO yang dihasilkan dari variasi cara pengadukan. Penelitian ini terdiri atas dua tahap, yaitu pengolahan VCO menggunakan daging buah kelapa Genjah Salak dan kelapa Dalam Mapanget. Jenis kelapa yang menghasilkan VCO paling banyak selanjutnya digunakan untuk tahap yang kedua, yaitu pengolahan VCO menggunakan hand mixer dan pengaduk mekanis. Hasil penelitian diperoleh bahwa daging buah dari kelapa Genjah Salak tidak sesuai digunakan sebagai bahan baku untuk proses pengolahan VCO dengan cara sentrifugasi. Pengadukan mekanis menghasilkan rendemen VCO 13,5% dibandingkan dengan hand mixer hanya 8,01%. VCO yang diekstraksi dari daging buah kelapa Dalam Mapanget dengan cara sentrifugasi memiliki sifat fisikokimia (warna, bau, bilangan peroksida, kadar air, bilangan iod dan bilangan penyabunan) serta profil asam lemak yang sesuai dengan standar APCC. Kata kunci: VCO, jenis kelapa, rendemen, sifat fisikokimia, profil asam lemak.ABSTRACTProperties of Virgin Coconut Oil Using Fruit from Two Types of Coconut Through Sentrifugation MethodVirgin Coconut Oil (VCO) was a high quality coconut oil, which was extracted from fresh coconut kernel. The objective of the research is to evaluate the yield of VCO processed through sentrifugation using kernel of Dwarf Salak and Mapanget Tall coconut fruit and properties of VCO made by variation of stiring methods.The research was conducted in two activities, the first step was processing of VCO by using coconut kernel from Genjah Dwarf and Mapanget Tall coconut fruit. The type of coconut obtained the higher yield of VCO was then used for the next step. The second step was to observe effect of different method of stiring on the yield of VCO. The VCO was then measured for its physychochemical properties and fatty acids profile. The results showed that the kernel of Salak Dwarf coconut was not suitable for raw materials on processing of VCO by sentrifugation method. The mechanical stiring obtained higher yield of VCO arround 13,5% compared to hand mixer was 8.01%. The VCO extracted from fruit of Mapanget Tall having physychochemical properties (colour, flavor, peroxide value, moisture, iodin value and saponification value) and fatty acids profile according with APCC standard Keywords: VCO, coconut types, yield, physychochemical properties, fatty acids.
