Salah satu produk diversifikasi aren yang bernilai ekonomi cukup tinggi adalah alkohol. Sebagian kecil petani hanya menyadap nira aren untuk diolah menjadi gula, namun pada umumnya didominasi pada pengolahan minuman lokal Captikus yang berkadar alkohol 30%. Introduksi teknologi pengolahan akan meningkatkan kadar alkohol dari 30% menjadi alkohol teknis berkadar 75-80%. Alkohol teknis dilakukan melalui 2 tahap, tahap pertama fermentasi nira aren selama 48 jam dan penyulingan hasil fermentasi, dan tahap kedua adalah penyulingan II memperoleh alkohol teknis. Pada tahap pertama diperoleh, yakni selama 48 jam fermentasi, dengan kadar alkohol awal 40%. Kadar alkohol setelah penyulingan II adalah di atas 70%. Analisis usaha pembuatan captikus secara ekonomis memberi keuntungan bersih Rp2.869.299, sedangkan dalam pengolahan alkohol teknis mendapat keuntungan bersih Rp9.000.000. Dalam pengolahan alkohol teknis teralokasi penggunaan tenaga kerja pria paling dominan, yakni 37 HOK per tahun. Kata kunci : Teknologi, pengolahan, alkohol teknis, tenaga kerja.ABSTRACTIntroduction of Technical Alcohol Processing Technology from Sugar Palm SapOne of the product diversification by high economic valuable sugar palm is to tap nira to be processed to alcohol. The small farmer only tapping sugar palm to be processed to become sugar, but is general predominated by processing of local Captikus which have alcohol rate to 30%. Introduktion of processing technology will improve rate of alcohol, from 30% becoming technical alcohol have rate to 75-80%. Introduction of technology with through 2 stage, first stage determine time and way of ferment and also distillation of first alcohol, and the second phase is distillation of II obtain;get technical alcohol. The fermentation time of alcohol obtained during 48 hour to produce with rate of alcohol early 40%. Alcohol rate after distillation of II is above 70%. Economic analysis showed that the benefit of technical alcohol Rp9,000,000 and captikus Rp2,869,299, and competent to be developed. In processing of technical alcohol is allocation usage of man labour most its 37 HOK per year.
