Knox saw immediate playing time as a true freshman at Arkansas in 2019, totaling 28 catches for 385 yards along with three touchdowns while being named honorable mention All-Freshman by Pro Football Focus.[5][6] He saw action in 10 games in the 2020 season, starting six, but made only seven receptions for 70 yards.[7] He moved from wide receiver to tight end in 2021 and posted 20 receptions for 141 yards and a touchdown.[8] The following year, he caught 26 passes for 296 yards and scored five touchdowns.[9]
Knox entered the NCAA transfer portal and ultimately transferred to the South Carolina Gamecocks for his final season of college football in 2023.[10] He played 10 games for the Gamecocks and totaled 37 receptions for 312 yards and two touchdowns.[11] He was selected second-team All-Southeastern Conference (SEC) by the league's coaches.[12] He was invited to the NFL Scouting Combine after the conclusion of his collegiate career.[13]
Knox signed with the Minnesota Vikings as an undrafted free agent on April 27, 2024.[17] He played in two preseason games, making one catch for 9 yards, and playing a total of 61 snaps.[18] He was waived/injured on August 22.[19] He received an injury settlement from the Vikings on September 2, 2024.[20]
