Jean Anthelme Brillat-Savarin (pengucapan bahasa Prancis: [ʒɑ̃ ɑ̃tɛlm bʁija savaʁɛ̃]; 1 April 1755, Belley, Ain2 Februari 1826, Paris) merupakan seorang pengacara dan politikus Prancis, yang, sebagai penulis The Physiology of Taste (Physiologie du Goût), memperoleh ketenaran sebagai seorang epikur dan gastronom:[1] "Grimod dan Brillat-Savarin. Di antara mereka, dua penulis yang menemukan seluruh genre esai gastronomi."[2]
